Sweet Potato Yogurt Bake Recipe
A totally luscious sweet potato recipe the whole family will enjoy.
Sweet Potato Yogurt Bake Recipe Ingredients
4 medium sized sweet potatoes, peeled and sliced relatively thinly
4 tablespoons parmesan cheese, grated
1 cup plain, unsweetened natural yoghurt
¼ cup cream
25g butter, cut into small cubes
pepper, to taste
cooking spray, to grease
Sweet Potato Yogurt Bake Recipe Directions
Preheat oven to 180 degrees Celsius (or approx 350 degrees F).
Lightly grease the bottom of a shallow oven-proof casserole or baking dish with a little cooking spray.
Arrange the slices of sweet potato evenly over the bottom of the casserole/ baking dish.
Intersperse little cubes of butter around the dish with the sweet potato.
In a small bowl, briskly whisk the cream with the yogurt.
Pour the cream & yogurt mixture over the sweet potatoes.
Sprinkle a little pepper over the top.
Sprinkle parmesan cheese over the top.
Bake - covered with aluminium foil - for 40 minutes.
Remove from oven and take off the aluminium foil.
Return casserole/ baking dish to the oven and continue baking - uncovered - for a further 10 minutes, or until the sweet potato is soft and tender and the cheese has turned bubbly and golden brown.
Serves: 4.
