Sweet potato soup recipe that the whole family will enjoy.

Sweet Potato Soup Ingredients
2 tablespoons vegetable oil
1 teaspoon curry powder
1 tablespoon coriander stems, finely chopped
1 onion, peeled and diced
1 stick of celery
400 grams (about 0.9 pounds) sweet potato, peeled and cut into 1 centimetre (half inch) cubes
2 litres (half a gallon) water
1 medium to large sweet potato
2 carrots< br />
1 parsnip
1 potato
165 millilitres (6 fl oz) coconut cream
salt and pepper
Sweet Potato Soup Directions
In a large saucepan place the following:
- 2 litres of water
- onion, celery, carrots, and parsnip
- 2 teaspoons salt
- 1 teaspoon pepper
Bring to a boil and simmer for 45 minutes.
Blend ingredients, either in a blender or with a hand held blender.
In a separate medium saucepan, heat the oil and add the curry powder and coriander stems.
Added sweet potato cut into cubes and stir through spice mixture until coated.
Combine all ingredients from both saucepans into the large saucepan, and cook covered for 20 to 30 minutes, until the sweet potatos are disintegrating and falling apart.
Remove from heat, add the coconut cream.
Blend mixture until smooth.
Reheat gently, do not boil.
Serve garnished with coriander leaves.
