Sweet Potato Fritatta Recipe Ingredients

500g (or approx 1lb) sweet potato, peeled & sliced
3 eggs, lightly beaten
200ml thickened cream
1 tablespoon olive oil
1 cup grated cheese
¼ teaspoon nutmeg
salt & pepper, to taste

Sweet Potato Fritatta Recipe Directions

Preheat oven to 180 degrees Celsius (or approx 375 degrees F).
Into a large, lightly greased baking dish, arrange the sweet potato.
Brush the olive oil over the sweet potato.
Bake until the pieces are just tender (approximately 20 minutes).
Remove from baking dish from the oven.
Reduce oven heat to 160 degrees Celsius (or approx 320 degrees F).
In a medium sized bowl, combine the beaten eggs with the cream, cheese, salt, pepper and nutmeg.
On top of the sweet potato, pour the egg, cream & cheese mixture.
Bake for 30 minutes, or until the egg mixture has set.
Serve warm with a fresh, crisp garden salad.
