Sweet Potato Croquettes Recipe Ingredients
3 cups mashed sweet potatoes (approx 4 large sweet potatoes)
1 – 2 cups bread crumbs
2 tablespoons butter
2 tablespoons brown sugar
1 tablespoon water
1 egg, lightly beaten
1 teaspoon salt
¼ teaspoon ground black pepper
vegetable oil for deep frying
Sweet Potato Croquettes Recipe Directions
In a large bowl, combine the mashed sweet potatoes, salt, pepper, butter and brown sugar.
Mix until all the ingredients are thoroughly combined.
Chill in the refrigerator for 1 hour.
While the croquette mixture is chilling, lightly beat the egg in a small bowl and put the bread crumbs into a separate small bowl or dish.
In a large, high-sided frying pan, heat enough vegetable oil for deep frying.
Wash your hands.
Remove from fridge and shape the mixture into croquettes with your clean hands.
Add water to the lightly beaten egg.
Dip the croquettes into the bread crumbs, then into the egg, then back into the bread crumbs.
Carefully fry the croquettes in the hot oil until they are golden and crisp on the outside.
Remove from oil and drain on several layers of kitchen paper.
Can be served with a dipping sauce and a crisp green side salad.
